Porcupine Meatballs

This recipe is a family favorite.

1 lb. ground beef
1/2 c. uncooked rice
1/2 c. water
1/3 c. chopped onion
1 tsp. salt
1/2 tsp. celery salt
1/8 tsp. garlic powder
1/8 tsp. pepper
1 15oz can tomato sauce
2 tsp. Worcestershire sauce

Mix meat, rice, water, and spices. Roll into balls and place in ungreased 9x13 pan. Mix tomato sauce and Worcestershire sauce. Pour over meatballs. Cover with foil. Bake at 350 for 45 minutes. Remove foil and bake 15 minutes longer or until done.

Enjoy!

  1. What do you make as a side with these? Also - silly question, but how big are the meatballs? (I think that is where I go wrong...) Thanks!

  2. These are really great with baked potatoes and a salad or green beans. For size, they should be a little bit smaller than the size of a golf ball. I use a Pampered Chef medium scoop - so if you have one of those it is the perfect size.
